Selected Shiraz blocks were harvested quite early at 22ºB to preserve the primary fruit characters and fresh acidity of the final product. Fruit was sourced from the Stellenbosch region, from a cool Mediterranean climate with loamy clay soils. Vines are trellised on a five-wire hedge system. Fermentation took place on the skins for about eight to 12 hours to extract the desired colour. The juice was separated from the skins and completed its primary fermentation in stainless steel tanks at temperatures of 14 – 160C. Hereafter, this Rosé was protein and cold stabilised before bottling.
This vibrant pink rosé rains ripe strawberries, red apple and raspberries in its flirty characteristics. The palate indicates a stunning equilibrium between acidity and sweetness that deserves the crisp finish.
